When we're sad and stressed, what do many of us do? We resort to chocolate. There's a long history of people using chocolate to make themselves happier, but the question still remains: is there a scientific basis behind it, or is the mood boosting ability of chocolate just an old wives' tale? Here are the facts on the chemical composition of chocolate and how it can affect our moods.

One of the things that could account for the satisfaction we feel upon eating a lot of chocolate is that it's so sweet and rich. Even dark chocolate has a high percentage of fat and sugar, and these properties stimulate the hypothalamus. The hypothalamus is the part of our brain responsible for pleasing sensations. When you eat chocolate to improve your mood, the sensations distract you from whatever's making you upset.

In addition, chocolate can affect the amount of serotonin in the brain. This chemical is known for having an effect on mood, and is regulated by many anti-depressants. While the effect of chocolate is far less than that of medical remedies for depression, it does have a noticeable one on the way serotonin is released.

Chocolate also contains substances called unsaturated N-acylethanoamines. These may be responsible for activation of cannabinoid receptors or an increase of endocannabinoid levels - some of the same effects that occur with marijuana consumption, but on a much smaller level. That could result in euphoric feelings and heightened sensitivity - possibly responsible for chocolate's reputation as an aphrodisiac.

One of the substances that makes unsweetened chocolate so bitter - theobromine - is similar to caffeine and theophylline. It, like those substances, is a stimulant. That means that consuming it could make you feel more alert and energetic, resulting in greater feelings of happiness. This chemical was first discovered in cacao beans in 1841 by a Russian chemist, but it wasn't until 1878 that it was isolated from those beans.

It's the primary alkaloid in cocoa powder and chocolate, with dark chocolate containing a lot and white chocolate containing only trace amounts. Theobromine also shows up in tea, kola nuts and guarana berries. Though it isn't addictive, it might be responsible for the feeling we refer to as being a "chocoholic", and has also been cited as one of the possible reasons some people consider chocolate to be an aphrodisiac.

Chemically, chocolate does have the ability to boost mood. However, to get much of an effect from these compounds, you'd have to eat a lot of chocolate. The fat and sugar content of this snack mean that it's not ready to be used to fight depression, but a little bit might help you cure the blues.

Let's just forget all the science for a moment though. I think most would say they are pretty happy while eating chocolate and after for a bit. Some things in life you don't need a scientific test for. Eating chocolate is one of those times. If it tastes good and makes you feel good then enjoy your chocolate.

Candles are not that hard to make, you can find directions in any craft store. Melt the beeswax (it takes like a minute in the microwave), add a wick and pour into the container or mold of your choice. Chocolate chilli cakes

“ Chillis are among the most widely used seasonings in the world and have been used in cookery for centuries. ”

1/4 cup pouring cream
60g dark, chopped chocolate
100g soft unsalted butter
110g (1/2 cup) caster sugar
2 eggs,
4 tablespoons light sour cream
150g (1 cup) plain flour
3/4 teaspoon medium chilli powder *
1/4 teaspoon bicarbonate of soda
1/4 teaspoon salt

* Herbie's medium chilli powder is a general purpose powder with a heat level of six and recommended for this recipe. If using other chilli powders, adjust to taste. Herbie's Spices, 9555 6035.

Method

Pre-heat oven to 175C. Heat 1/4 cup pouring cream until boiling and pour over 60g dark, chopped chocolate and stir until the chocolate mixture is melted and smooth. Line a small bowl with plastic wrap, pour chocolate mixture into bowl, allow to cool then cover and freeze until very firm. Beat 100g soft unsalted butter and 110g (1/2 cup) caster sugar until light and fluffy, then add 2 eggs, one at a time, beating well. Add 4 tablespoons light sour cream and beat until smooth. Sift 150g (1 cup) plain flour, 3/4 teaspoon medium chilli powder *, 1/4 teaspoon bicarbonate of soda and 1/4 teaspoon salt together. Stir into butter mixture and mix until well combined. Spoon mixture into 6 greased muffin tins (1/2 cup capacity) and bake for 15 minutes. Cut firm chocolate into 6 pieces, roll each into a small ball and place 1 piece in the centre of each cake, pressing down gently into cakes. Bake for a further 15-18 minutes or until firm to touch. Cool cakes in the tin for 5-8 minutes before turning out.

To serve

Serve warm cakes with vanilla ice-cream.

Serves 6.

Cook Time: 5 minutes

Ingredients:

1 package sugar-free flavored gelatin, any flavor
6 packages unflavored gelatin
1/2 cup cold water
2-3 candy molds, depending on the size of the cavities in the mold

Preparation:

1. Prepare candy molds by spraying with nonstick cooking spray.

2. Combine unflavored gelatin, flavored gelatin, and cold water in a small saucepan. Stir until well mixed.

3. Place saucepan on stove over medium heat. Continue stirring while mixture heats up and becomes liquid.

4. Once mixture is fully liquid, remove from heat and pour into prepared molds.

5. Allow to cool slightly, then place in freezer for 10 minutes to solidify.

6. Once solid, remove carefully from molds, and enjoy!

And the only sweet treat to put smiles on their sweet teeth is none other than - would you guess it? - chocolate.

And whether you consider it scary or you're willing to embrace it, these consumers of mass amounts of chocolate are literally positioned everywhere around the globe. And whether they're public about their coco addictions or are a bit shy to reveal their ties with eating sizable amounts chocolate, they are who they are; as connoisseurs, appreciators, aficionados and so forth. As such, and since these individuals are clearly all about all things chocolate, it would be appropriate to dub them as "Chocoholics."

Who Enjoys Chocolate Treats a Few Times a Day?

Chocoholics do, of course! And what they absolutely never need is a counter-top jar, work-desk drawer or car compartment devoid of any form of a chocolate treat. What they need is a constant supply of chocolate, no matter what type, size or shape. See, what you need to understand is that having no chocolate as a chocoholic is like a standard person going through life without a beating heart. Needless to say, it's clear that chocolate is everything to these passionate chocoholics. And it's not as if it's a negative quality to have. Rather, it's something that makes them simply who they are - chocolate-craving and coco-needing people.

Let The Chocoholics Be - They're Too Sweet To Cause Harm

And why not let these people stay that way, with all their good-natured, sweet-toothed dispositions? By eating chocolate like there's no tomorrow they're not hurting anyone in the process. Eating chocolate treat after chocolate treat, if anything, could make them a bit jittery from the surplus of sugary goodness racing through their bodies. But, that's O.K.; it's just merely them being nostalgic and feeling like a kid again. And if that's the only bad thing occurring, I don't see why these chocoholics should cease their coco love affairs or stop their chocolate-induced smiling.

Feed the addiction and give that one chocoholic or two or more that you know the gift of chocolate. Not only will you be placed on their good side -not saying you aren't there already- but you will also, hopefully, be able to reap the benefits of the coco gift itself. And, as I'm sure you know, there is nothing like sharing the creamy sweetness that is chocolate with a good friend or two.

Title: Peanut Butter-Chocolate Bon Bons
Yield: 20 Servings

Ingredients

1/2 c margerine, softened
2 c creamy peanut butter
1 lb confectioner's sugar
4 c rice krispies
1 lb dipping chocolate

Instructions

Blend margerine, peanut butter and confectioner's sugar. Crush
cereal slightly in a plastic bag.
Add cereal to peanut butter mixture and mix well. Roll mixture
into 3/4 inch balls. Chill for one hour.
Melt chocolate slowly in top of double boiler. Stir well. With a
dipping fork, dip each ball into the chocolate to coat. Place on wax
paper to cool.
Makes 7-8 dozen.

Some of my favorite wedding favor ideas and trends include:

Edible Treats

Everyone loves something to eat, so delight your guests with something sweet or savory. Chocolates, almonds and candies are always popular. Or give a regional favorite from your wedding location: peanuts in Georgia, Vermont maple syrup, or hot salsa in Texas.

Something Homemade

Along those lines, test your culinary skills and make a homemade jam or spread for your guests (package them in festive customized jars!).

Quench their thirst

If your budget allows it, wow your guests with a nice bottle of wine, whether a selection served at the wedding or from a local winery. If you're really ambitious, consider making your own, and stamp it with a personalized label. This is one of my favorite wedding favor ideas, but plan ahead - this must be done at least 3 months in advance.

Entertain Them

Give your guests something that will forever remind them of your wedding day. Nothing brings a person back to a special moment quite like a song. So make a wedding playlist, and feature songs from the ceremony and reception. Getting married in a place known for a great music scene? Feature selections from local artists. Or if the two of you just love music and want to share your tastes with your guests, make a cd of your favorites. Every time they pop it into the player, they'll think of you and what a great time they had at your celebration.

Personalize it

These days, almost any item or trinket can be personalized, so think of something creative that goes along with your wedding theme, and stamp it with your initials or wedding date. You name it; someone can customize it - golf balls, koozies, ornaments, seashells, matchbooks, candles or soaps. You're only limited by your imagination. I've even seen fortune cookies filled with personalized fortunes!

Give something back

Another one of my favorite wedding favor ideas: Some brides are foregoing the traditional favor altogether, instead making a donation to their favorite charity. You can print nice cards that read "in lieu of a favor, a donation has been made to xyz charity." Just be sure your chosen charity is legitimate, and get a receipt for tax purposes.

How and When to Give them -

Wedding Favors are all about presentation. A few m & ms can be the epitome of panache when wrapped in a pretty package. Choose packaging that matches or complements your wedding colors and table decor. Matching ribbons and personalized logo stickers or favor labels always add a nice touch. Depending on the favor you choose to give, the choice of packaging may be obvious. If not, consider these fun options:

• Mini Chinese take-out boxes (or any miniature box decorated to reflect your wedding style)

• Miniature canvas bags (printed with your monogram or wedding logo!)

• A Seashell

• Customized bottles or jars

• Miniature baskets

• Small Julep cups

• Mini Terracotta pots

In determining just how and when to present them, you also have some options. Set up a table and display them along with a card that says "Please take one" or "Thank You." (this makes for a lovely photo opp!). Or make your favors part of your table décor and place one at each place setting. A waiter or coatroom attendant can also hand them out at a designated time. Some couples even add the extra special personal touch of distributing them personally to their guests as they leave the reception. However, due to timing and logistics, this method is best saved for smaller weddings.

What They'll Cost -

Remember, favors are simply a nice gesture to cap off a successfully planned and fully considered event. They need not drain your budget. Expect to spend around $1 per guest on the low end, and just like any other element of a wedding, costs can always creep up to suit your wildest imaginations (hmmm - the diamond encrusted Tiffany picture frames sure sound nice).

If budget is a concern, you don't necessarily need to cross favors off of your expense list. Food and candy items are often inexpensive and always popular. Or round up your family or bridesmaids for a fun night of homemade favor-making. Even if you have your heart set on a high-end item, save by giving one gift per couple, placed between their dinner plates and tagged with the couples' names (of course, your single friends will each still receive one). Or get two things for the price of one, and ask your florist to create centerpieces that can be split into tiny bouquets for your guests to take home.

Yummy Chocolate Candy Wedding Favors

Mmmmmm..chocolate. One of the most popular wedding favors out there for brides is to use some kind of candy. It's relatively inexpensive, well liked by nearly everyone, and you can wrap it up to where it looks totally cute. Perhaps the favorite (of mine anyway) are the chocolate wedding favors. Despite what you think, you don't have to spend a fortune to make chocolate wedding favors, its a great inexpensive wedding favor. On top of that, you can even lots of different things with chocolate wedding favors to spice it up and make it unique for your wedding. Here are some great ideas to make your own chocolate wedding favors.

1. Chocolate Rose Wedding Favors

If you haven't seen this done before, it's pretty charming. Grab some Hershey's kisses, wire, cellophane, green florist tape, and some silk leaves if you like. To make these chocolate wedding favors, take two kisses, put them bottom to bottom and stick a length of wire through them both. Then wrap them tightly in cellophane and secure with the florist tape, adding leaves to the middle of the wires as desired. This takes a lot of time, but they turn out cute if you keep everything looking the same. It may take you a couple of roses before you get the knack for it. But they can be placed in small baskets in the middle of each table as a cute addition to your table's centerpiece.

2. Chocolate Lollipop Wedding Favors

This chocolate wedding favor can be done quickly and easily, and they do turn out really cute. Simply go to a craft store and pick out a candy mold that you would like to use, and a bag of lollipop sticks as well (you can get a pack of a hundred or more for just a few dollars). Then, melt almond bark and add food coloring if you'd like a certain color, pour into mold, add the lollipop stick, and freeze for a few minutes until firm. Then, wrap each in cellophane and store in the refrigerator until time to serve. Or, if you prefer, you can find your own recipe for chocolate and use that instead, but almond bark is the easiest for me.

3. Chocolate Bar Wedding Favors

This is a really simple wedding favor. Go to the store and either get a bunch of mini chocolate bars such as a bag of assorted chocolate bars, or large full size chocolate bars.
